3 Cups – Organic Gemini Horchata Original

¼ Cup – Otto’s Cassava Flour

¼ Cup – Honey

3 Tsp – Vanilla Extract

Elderflower Blueberry Syrup:

1 Pint – Fresh Organic Blueberries

¼ Cup – Water

½ Cup – Honey (More/Less to your preference)

Juice of 1 Lemon

Zest of 1 Lemon

3-4 – Whole Cloves

2 Tbsp – Elderflower Syrup/Extract

White Chocolate Drizzle (Optional):

½ Cup – White Chocolate Chips

¼ Cup – Kasandrinos Extra Virgin Olive Oil


To create the syrup, in a pot, combine all of the ingredients except for the elderflower syrup. Bring the mixture to a boil, reduce the heat and continue to cook until reduced into a syrup; about 10-15 minutes. Do not let it cook too long and get too thick. Strain the syrup through a fine sieve. Do not toss away the cooked blueberries. These will be the blueberries you add into your Popsicle mixture. Once you have strained the syrup, add Elderflower syrup and mix well. Remove from the heat, let cool and refrigerate. Let’s move on to the next component for the Elderflower Blueberry Pie Popsicles.

In a blender, blend all of the Popsicle ingredients until smooth. Heat the mixture in a pot until it comes to a boil. Once the Popsicle mixture has thicken for the Elderflower Blueberry Pie Popsicles, remove it from the heat and refrigerate the mixture until completely cooled. Once cooled, spoon into Popsicle mold along with the cooked blueberries from the syrup.

The white chocolate drizzle is probably the easiest thing to make. In a double boiler or your preferred method of melting chocolate, melt the white chocolate and mix well with olive oil. The olive oil will allow the white chocolate to remain liquid at room temperature. The drizzle can be stored at room temp until ready for use. Let’s assemble the Elderflower Blueberry Pie Popsicles!

Once the Popsicles are nice and frozen, you might experience some difficulty removing them out of the mold. That’s very common among making Popsicles. Run warm water over the entire mold for 30-45 seconds and it will come right out. Once it is out, drizzle the elderflower blueberry syrup and white chocolate drizzle.
