FIG & CACAO MUFFIN

INGREDIENTS

2 cups tigernut flour

1 tsp baking powder

1 tsp baking soda

pinch of sea salt

1/4 cup cacao powder

1/2 cup coconut sugar

1/2 cup nut milk

1/2 cup unsweetened apple sauce

1 tsp vanilla extract

2 tbsp chia seed + 6 tbsp water

1.5 cup chopped figs

1/4 cup cacao nibs 

DIRECTIONS

  1. Combine chia seed with water and refrigerate for at least 10 minutes until a gelatinous mixture is formed.
  2. Preheat oven to 350
  3. Combine dry ingredients
  4. Combine wet ingredients
  5. Add the two together, including gelatinous chia seed
  6. Pour batter into pre-greased muffin tins.
  7. Bake for 20-30 minutes or until cooked through.
