Gluten Free TigerNut Cookies

INGREDIENTS

  • 200 gr tigernut flour (it is nut free and sugar free)
  • 1/4 tsp salt
  • 1/4 tsp bicarbonate of soda
  • 1/2 tsp vanilla powder
  • 1/2 tsp cinnamon powder
  • 65 gr chocolate chips
  • 4 tbsp sunflower oil
  • 4 tbsp rice syrup
  • 50 ml water

DIRECTIONS

1. Preheat the oven at 170 C. In a bowl mix tigernut flour, salt, bicarbonate of soda, vanilla powder, cinnamon powder and chocolate chips.

2. In a glass mix sunflower oil, rice syrup and water.

3.  Pour liquid ingredients in the bowl where the dried ones are and mix well with your hands. Take 1 tbsp of the mix and roll a ball with your hands, make a cooking shape and repeat the process until you finish all the mix. Put your cookies on an oiled baking tray.

4. Bake them at 170C for 20 minutes. When you take them out of the oven they are usually soft but they get harder as they cool down…so be patient before giving the first bite!
