Pumpkin Chai Chia Pudding

For the filling:
  1. 2 & 1/4 cup canned organic pumpkin (not pumpkin pie filling)
  2. 1/4 cup full-fat coconut cream
  3. 1/4 cup pure maple syrup
  4. 3 tbsp arrowroot powder (or cornstarch)
  5. 2 tsp vanilla extract
  6. 1 tbsp of Pumpkin Spice
Chia seed Pudding:
  1. - 4 table spoons of chia seeds
  2. - 2 tsp of vanilla extract
  3. - 1 cup of Organic Gemini Chai tiger Nut Milk
Crust
  1. - 1/2 cup tiger nut flour
  2. - 1/2 cup soaked tiger nuts
  3. - 1/2 cup dates
  4. - pumpkin pie seasoning as desired
Chia seed Pudding
  1. - take 1/4 cup of chia seeds and soak overnight in tiger nut chai milk
  2. - add a dash of pumpkin spice seasoning
Crust
  1. - blend soaked nuts, dates, and pumpkin spice in a food processor, and press into dish
Pumpkin layer
  1. - Mix corn starch and maples syrup together until clumps dissipate
  2. - add the rest of the ingredients.
Notes
  1. Soak the tiger nuts overnight in water, they won't get as soft as your typical nut varieties, but they just require a few more pulses in the food processor!
