NO-BAKE CHOCOLATE CHIP COOKIES

Ingredients

(Makes 10 cookies)

1 cup tigernut flour
5 tsp. maple syrup
1 tsp. pure vanilla extract
¼ tsp. salt
2 Tbsp. cacao chocolate chips or nibs
1 tsp. water

Directions

  1. In a large bowl, combine all ingredients and mix until fully combined.
  2. Scoop out balls of dough and flatten into cookie shapes.

Tips:

  1. Let the cookies sit on the counter for 15-20 minutes before serving. As they dry, they’ll feel freshly baked.
  2. If you prefer crunchy cookies, they can be baked at 375 degrees F for 10 minutes or until golden brown.
