VANILLA BEAN OVERNIGHT OATS

Ingredients

(makes 3 servings)

  • 2 cups oats or muesli
  • 1/4 cup goji berries
  • 2 cups cashew* or any other nut milk
  • 1/2 cup Vanilla Bean TigerNut Smoothie Mix

Toppings: banana.

Directions

Mix all ingredients well in a bowl or jar and let sit in the fridge overnight.  In the morning, serve with goji berries and fresh fruit. Keep the oats in the fridge for up to 3 days.

*If making your own cashew milk, soak 1/2 cup cashews in filtered water for at least 4 hours, drain and rinse, then blend with 2 cups filtered water.
