TIGERNUT BARS

INGREDIENTS

Makes 12-15  Bars 

6 Pitted dates 

2 Dried Figs 

1/2 Cup Walnuts 

1/2 Cup Pecan

1/2 Cup Dried Cranberries 

1/2 Goji Berries

1/4 TigerNut Oil

1/4 Water 

1 tsp of Vanilla Extra 

1 Cup TigerNut Flour 
Topping 
4 tbs Coconut oil 
3 tbs Maple syrup 
3 tbs Cacao powder 

DIRECTIONS

Add the dates, dried figs, walnuts, pecan, dried cranberries, goji berries, vanilla extract, TigerNut Oil and water. Pulse and blend until the mixture is small and sticky. Then add TigerNut Flour and mix with your hands. 
  1. Spoon it out onto a bowl and knead with your hands for about a minute until all the small pieces form one large clump. Transfer it on a flat surface (I used a plate) and form the shape of a long rectangle. Flip it around so the other side can be flattened by the surface.
  2. Use a knife and cut off the top and bottom ends, then cut the bar in half. Put it in the freezer for the moment while you prepare the topping.
  3. Combine a teaspoon of coconut oil with 4 tablespoon of cacao powder and maple syrup in a very small bowl and mix it up.
  4. Take the bars back from the freezer and drizzle this mixture on top of the bars evenly, then put it back into the freezer for 20 minutes.
